MORE ABOUT HVAR TOWN
Hvar is an island of many beauties, both in natural and urban life. Yet, even among all that splendor, Hvar town manages to thrill its guests and starts forth as a real jewel in the crown of the island.
There is no better place to dream of the stirring history of these Dalmatian isles than the steps of the Fortress above the town. You can almost imagine the shade once cast by the Venetian winged lion over the heads of the citizens, with the harbor lying far below and the land on each side of it stretching out and away ; across the water islands, always islands, from the tiny islets (Pakleni isles) which shelter the port, to distant majestic islands like Vis. made entirely in the Venetian style, Hvar town is truly the Venice of Adriatic islands- nothing short of elegant and sophisticated, but still retaining that playful Dalmatian charm. It boasts one of the oldest theaters in Europe, a beauty central square and impressive Franciscan monastery.
After the walking tour of Hvar town, we depart for Milna (another small town), to Lambik restourant (see more about the restaurant at the link: Konoba Lambik).
Once we arrive in the restaurant you will be treated to a rare honor – to see first hand how premier chefs make “gregada”, a wonderful seafood dish you will later eat for lunch!
Gregada emerged as a handy lunch for hard working fishermen, who didn’t have time for a proper three course meal, so they merged soup and main course into one..Fresh fish is an absolute must for gregada – thus it’s hard to make this dish outside regions with a strong fishing heritage. Some of the fish (always white fish, never blue!) most commonly used are: pagar , grouper , sea bass or monkfish… Once you have the fish, it’s startlingly easy to make: you just have to cook the fish, mixed with onion, Mediterranean spices, herbs and potatoes. After
you try it, you’ll see it’s unimaginably delicious! For added pleasure, the right wine has to be selected and enjoyed in the right type of a glass!
After lunch, we drive towards Jelsa town, to undertake our wine odyssey.
Geographic location of Croatian and its climate is very suitable for growing grapes, and the diversity of soil and temperature allow the production of various types of wine. While the whole country has a solid and at time propulsive timne production, Dalmatia especially is rich indigenous grape varieties . The most famous wines are babić and plavina (Primošten), merlot (Drniš), debit, pošip, maraština i grk (Korčula), white vugava and crni plavac (Vis), plavac and bogdanuša (Hvar), plavac mali (Pelješac), prošek (the desert wine), and the world respected premium red wine , Dingac .
Here in Jelsa, we will undertake the tour of two premier wineries: Tomić and Duboković, where you can try some of the notch Croatian wines.
Tomić winery is infinitely enchanting place. it’s owner, Andro Tomic produces very specific Dalmatian wines, thus continuing the hundred fifty years old wine-making family tradition. His plavci wines are unlike any other, softer and more subtle, with a special character. To reach such a high quality and unique style of wine certainly, he spent many years studying in France, acquiring extensive oenological knowledge. His decision to return to Hvar proved to be a wonderful choice, to the delight of wine lovers across Europe.
Duboković winery is another winery with a long tradition. Its owner, Ivo Duboković was literary born over the wine basement. He has his own vineyard , and his flagship wine, called “2718 hours of sunshine in a bottle”, comes with the position on the north side of the island. Duboković has always strives to make every drop of wine perfect. His philosophy is that a wine lover buys wine because it found that the fine and wel , but not because it says that it is superior.
Afterwards, we will drive back to Stari Grad and board the ferry that will take us back to Split.
